- Boil the Noodles: Bring a large pot of water to a rolling boil, add soba noodles, and cook for 4-5 minutes until tender but firm. Drain and set aside.
- Prepare the Sauce: In a bowl, combine tsuyu and Korean wild sesame oil or chili oil. Stir gently. Chop green onion and slice red chili if using.
- Rinse the Noodles: Rinse cooked noodles under cold water for about 30 seconds to stop cooking and remove excess starch.
- Toss the Noodles with Sauce: Add rinsed noodles to the sauce bowl and toss gently to coat them evenly.
- Add Toppings: Sprinkle chopped green onion, ground sesame seeds, and optional toppings over the noodles. Serve cold.
