  • 3 tablespoons Tsuyu Soy sauce can be substituted.
  • 2 tablespoons Korean Wild Sesame Oil (Deul-gireum) Toast with high-quality sesame oil if Korean version is not available.
For the Toppings
  • 2 tablespoons Green Onion/Chives Optional, adds fresh crunch.
  • 2 tablespoons Toasted Sesame Seeds Grinding them releases more flavor.
  • 1 sheet Toasted Seaweed Optional.
For the Spicy Version
  • 1 tablespoon Chili Oil Lao Gan Ma adds unique flavor.
  • 2 slices Red Chili Omit for less spice.

Method
 

Step-by-Step Instructions
  1. Boil the Noodles: Bring a large pot of water to a rolling boil, add soba noodles, and cook for 4-5 minutes until tender but firm. Drain and set aside.
  2. Prepare the Sauce: In a bowl, combine tsuyu and Korean wild sesame oil or chili oil. Stir gently. Chop green onion and slice red chili if using.
  3. Rinse the Noodles: Rinse cooked noodles under cold water for about 30 seconds to stop cooking and remove excess starch.
  4. Toss the Noodles with Sauce: Add rinsed noodles to the sauce bowl and toss gently to coat them evenly.
  5. Add Toppings: Sprinkle chopped green onion, ground sesame seeds, and optional toppings over the noodles. Serve cold.
