Ingredients
  

For the Meatballs
  • 1 lb Ground Turkey 93% lean, 7% fat is recommended
  • 1/2 cup Panko Breadcrumbs Can substitute with classic breadcrumbs
  • 1 medium Red Onion Finely minced
  • 1/2 cup Feta Cheese Crumble block feta for better flavor
  • 2-3 cloves Garlic Minced
  • 1 large Egg Binds ingredients together
  • 1 tsp Dried Oregano
  • 1 tsp Dried Dill
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
For the Tzatziki Sauce
  • 1 cup Greek Yogurt Plain yogurt recommended
  • 1 medium Persian Cucumbers Grated and wrung out of excess liquid
  • 1 tbsp Fresh Dill Fresh preferred, dried in lesser amounts is okay
  • 1 tbsp Lemon Juice Fresh is best
  • 1 tbsp Olive Oil
  • Salt to taste
  • Black Pepper to taste

Method
 

Tzatziki Sauce Preparation
  1. Draining the grated Persian cucumbers using paper towels to remove excess moisture. In a medium bowl, combine the drained cucumbers with Greek yogurt, fresh dill, minced garlic, lemon juice, olive oil, salt, and pepper. Stir until smooth and cover. Refrigerate while preparing meatballs.
Meatball Preparation
  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine ground turkey, panko, minced onion, crumbled feta, minced garlic, egg, dried herbs and spices. Mix gently.
  3. Form mixture into 1-inch balls and place on prepared baking sheet. Optionally, brown in a skillet for enhanced flavor.
  4. Bake for 15-20 minutes, checking for an internal temperature of 165°F (74°C).
  5. Remove from oven, let rest, and serve with tzatziki sauce and lemon wedges.

Notes

For optimal flavor, allow tzatziki to meld while preparing meatballs. Store tzatziki separately to prevent sogginess.
