Step-by-Step Instructions
- Start by adding 1 cup of small curd cottage cheese, 2 eggs, 1 cup of oats, and 1 teaspoon of baking powder into a blender. Blend until the mixture is smooth and creamy, which should take about 30 seconds.
- While the batter rests, place a non-stick skillet over medium heat. Allow it to warm for about 2-3 minutes. If needed, lightly grease the skillet with oil or cooking spray.
- Pour about 1/4 cup of the pancake batter onto the skillet for each pancake. Let them cook for about 3-4 minutes or until you see bubbles forming on the surface. Carefully flip the pancakes with a spatula and cook for an additional 2-3 minutes, until they are golden brown on both sides.
- Transfer the pancakes to a warm plate and cover them with aluminum foil to keep warm while you prepare the remaining batter.
- Once all the pancakes are cooked and kept warm, serve immediately with fresh fruits, honey, maple syrup, or yogurt.

Notes
Use small curd cottage cheese for a smoother batter and avoid overmixing the batter to keep pancakes fluffy. Store leftovers in an airtight container in the fridge for up to 3 days.
