Step-by-Step Instructions
  1. Start by patting the chicken breasts dry with a paper towel and coat with blackened seasoning.
  2. Heat a skillet, add olive oil, sear chicken for 4 minutes on one side, then flip and transfer to a preheated oven at 400°F for 10 minutes.
  3. Boil a large pot of salted water, add penne pasta, and cook until al dente (10-12 minutes), reserving one cup of pasta water.
  4. In the same skillet, sauté red peppers, onion, and garlic over medium heat until onions are translucent. Add half and half and whisk in Parmesan to create the sauce.
