Step-by-Step Instructions for Cottage Cheese & Spinach Quiche
- Preheat your oven to 375°F (190°C).
- Finely chop one small onion and sauté in a medium skillet over medium heat for about 5 minutes until soft and translucent. Optionally add minced garlic in the last minute.
- In a large mixing bowl, combine cottage cheese, sautéed onions, fresh spinach, eggs, garlic powder, salt, pepper, and half of the cheddar cheese, stirring until well mixed.
- Spray a baking dish with nonstick cooking spray and transfer the mixture into the dish evenly. Top with remaining cheddar cheese.
- Bake in the preheated oven for 30-35 minutes until edges are set and top is golden brown.
