- Preheat your oven to 180°C (350°F) and prepare your springform pan by buttering the sides and lining the bottom with parchment paper.
- Melt 1 cup of butter in a medium saucepan over low heat, then add in 1 cup of Guinness and stir gently.
- Remove from heat, whisk in 3/4 cup of cocoa powder and 2 cups of superfine sugar until glossy.
- In a separate bowl, beat together 1 cup of sour cream, 3 large eggs, and 2 teaspoons of vanilla extract, then gradually mix into the Guinness mixture.
- Sift in 2 cups of plain flour and 1 teaspoon of bicarbonate of soda into the wet mixture, folding gently until combined.
- Pour the batter into the prepared pan and bake for about 1 hour, checking for doneness with a toothpick.
- Allow the cake to cool in the pan for 15 minutes before releasing it and cooling completely on a wire rack.
- To prepare the icing, beat together 1/2 cup of softened butter and 8 oz of cream cheese until smooth, then add 3-4 cups of icing sugar and 1/4 cup of Baileys.
- Once the cake is completely cool, frost it generously with the Baileys icing.
- Slice and serve the cake, ideally with vanilla ice cream or whipped cream.
