Step-by-Step Instructions
  1. Preheat your oven to 180°C (350°F) and prepare your springform pan by buttering the sides and lining the bottom with parchment paper.
  2. Melt 1 cup of butter in a medium saucepan over low heat, then add in 1 cup of Guinness and stir gently.
  3. Remove from heat, whisk in 3/4 cup of cocoa powder and 2 cups of superfine sugar until glossy.
  4. In a separate bowl, beat together 1 cup of sour cream, 3 large eggs, and 2 teaspoons of vanilla extract, then gradually mix into the Guinness mixture.
  5. Sift in 2 cups of plain flour and 1 teaspoon of bicarbonate of soda into the wet mixture, folding gently until combined.
  6. Pour the batter into the prepared pan and bake for about 1 hour, checking for doneness with a toothpick.
  7. Allow the cake to cool in the pan for 15 minutes before releasing it and cooling completely on a wire rack.
  8. To prepare the icing, beat together 1/2 cup of softened butter and 8 oz of cream cheese until smooth, then add 3-4 cups of icing sugar and 1/4 cup of Baileys.
  9. Once the cake is completely cool, frost it generously with the Baileys icing.
  10. Slice and serve the cake, ideally with vanilla ice cream or whipped cream.
