- Preheat the oven to 350°F (175°C) and gather your mixing bowls. In a medium bowl, whisk together the flour, baking soda, and salt until evenly mixed. In a separate bowl, cream together butter (or coconut oil for vegan), brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the egg (or flaxseed mixture for vegan) and vanilla extract until fully combined.
- Gradually add the dry flour mixture to the wet ingredients, mixing with a spatula until just combined; be careful not to overmix. Fold in the chocolate chips to create a rich chocolatey dough. Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes.
