  • 2 cups fresh strawberries hulled and sliced
  • 1 large cucumber thinly sliced
  • 1/4 red onion thinly sliced
  • 1/4 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the sliced strawberries, cucumber, red onion, feta cheese, and chopped mint leaves.
  2. In a separate small bowl, whisk together the balsamic vinegar, olive oil, honey, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and gently toss to coat all the ingredients evenly.
  4. Let the salad sit for about 10 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
