  • 2 tbsp Fresh Parsley Chopped
For the Dressing
  • 1/2 cup Mayonnaise Can substitute with vegan mayonnaise
  • 1/4 cup Sour Cream Can be replaced with Greek yogurt or omitted
  • 2 tbsp Lemon Juice Freshly squeezed
  • 1 tbsp Dijon Mustard
  • 1 clove Garlic Minced
  • 1 tbsp Honey Can substitute with agave syrup
  • Salt To taste
  • Pepper To taste

Method
 

Preparation Steps
  1. Wash and slice cucumbers into thin rounds, slice red onion thinly, halve cherry tomatoes, and dice avocado into small cubes.
  2. In a large mixing bowl, combine the vegetables.
  3. Gently fold in cooked shrimp and sprinkle with chopped dill and parsley.
  4. Season with salt and pepper, then toss until combined.
  5. In a separate bowl, whisk together mayonnaise and sour cream until creamy.
  6. Add lemon juice, Dijon mustard, minced garlic, and honey; mix well.
  7. Pour dressing over salad mixture and fold together gently.
  8. Cover and refrigerate for at least 30 minutes before serving.
  9. Garnish with extra fresh herbs before serving.
