Ingredients
  

  • 2 pounds beef stew meat cut into 1-inch cubes
  • 4 medium potatoes peeled and diced
  • 3 carrots sliced
  • 1 onion chopped
  • 3 cloves garlic minced
  • 1 can 14.5 ounces diced tomatoes, undrained
  • 4 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Method
 

  1. Heat the olive oil in a skillet over medium-high heat. Brown the beef stew meat on all sides, then transfer it to the crock pot.
  2. Add the potatoes, carrots, onion, and garlic to the crock pot.
  3. Pour in the diced tomatoes (with juice) and beef broth. Stir in the Worcestershire sauce, thyme, rosemary, salt, and pepper.
  4. Cover and cook on low for 8 hours or on high for 4 hours, until the meat and vegetables are tender.
  5. Taste and adjust seasoning if necessary before serving.
