Ingredients
  

For the Fish
  • 500 g boneless white fish Snapper or tilapia can be used as substitutes.
  • 2 tbsp vinegar Lemon juice can be used as a substitute.
  • 1 tbsp peri peri seasoning Adjust according to taste.
  • 1 tbsp ginger garlic paste Fresh minced ginger and garlic can be substituted.
  • 1 tsp salt Adjust to your preference.
  • 1/2 tsp crushed black pepper Use fresh ground for better flavor.
For the Coating
  • 1 cup panko breadcrumbs Can substitute with crushed cornflakes.
  • 1/2 cup all-purpose flour Reserve some for the spice blend.
  • 2 tbsp dried parsley Optional.
For the Binding
  • 1 large egg Can substitute with a flax egg for a vegan version.
  • 1/4 cup milk Any plant-based milk can be used.

Method
 

Preparation
  1. Marinate the fish by combining fish, vinegar, peri peri seasoning, ginger garlic paste, salt, and pepper in a bowl. Toss well and let sit for 15 minutes.
  2. Prepare the coating by mixing panko breadcrumbs, all-purpose flour, and dried parsley in a bowl.
  3. In another bowl, whisk together the egg and milk until smooth to create the egg mixture.
  4. Coat the marinated fish in the egg mixture and then roll in the breadcrumb mixture until evenly coated.
Cooking
  1. For deep frying, heat oil to 180°C (356°F) and fry the nuggets for 4-5 minutes per side until golden brown.
  2. For air frying, preheat air fryer to 180°C (356°F) and air fry nuggets for 10-15 minutes, flipping halfway.
  3. For baking, preheat oven to 200°C (392°F) and bake nuggets for 15-18 minutes, flipping halfway.
Serving
  1. Serve hot with a tangy dipping sauce like tartar sauce or aioli.
