Method
 

Step-by-Step Instructions
  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Peel and slice the carrots, then boil them in a pot of water until fork-tender, about 10-15 minutes. Drain and cool slightly.
  3. Smash each carrot piece to about half an inch thick and arrange them on the baking sheet.
  4. Drizzle olive oil over the smashed carrots, sprinkle with garlic powder, smoked paprika, salt, and pepper, and toss to coat. Top with grated Parmesan cheese.
  5. Roast the carrots for 20-25 minutes until golden brown and crispy.
  6. Remove from oven and let cool slightly before serving warm with your favorite dipping sauce.
