Ingredients
  

  • 2 large chicken breasts about 1 pound total
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup feta cheese crumbled
  • 1/4 cup honey
  • 1 tablespoon hot sauce adjust to taste
  • 2 tablespoons olive oil
  • Fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix together the salt, black pepper, garlic powder, and paprika. Season both sides of the chicken breasts with this spice mixture.
  3. Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and combine the panko breadcrumbs and crumbled feta cheese in a third dish.
  4. Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, then coat with the panko and feta mixture, pressing gently to adhere.
  5. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the breaded chicken breasts and cook for 3-4 minutes on each side until golden brown.
  6. Transfer the chicken to the prepared baking sheet and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  7. While the chicken is baking, combine the honey and hot sauce in a small saucepan over low heat, stirring until warmed through.
  8. Once the chicken is done, drizzle the hot honey sauce over the top and garnish with chopped parsley before serving.
