Method
 

Step‑by‑Step Instructions
  1. Preheat your oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  2. Using a sharp knife, carefully slice each potato into ⅛-inch-thick slices without cutting all the way through.
  3. Place the sliced potatoes on the baking sheet, drizzle with olive oil, and sprinkle with sea salt and black pepper.
  4. Insert sage leaves into the slits of each potato, drizzle with more olive oil.
  5. Roast the potatoes in the oven for about 50 minutes until the edges are crispy.
  6. Remove from the oven and brush generously with garlic butter, then return to the oven for an additional 25 minutes.
  7. Once done, garnish with fresh parsley and red pepper flakes before serving warm.
