Ingredients

For the Filling

  • 2 tbsp Tomato Paste adds depth and tang
  • 1/4 cup Beef Broth or substitute with water
  • 1 tbsp Taco Seasoning for classic Tex-Mex flavor
For the Tortillas
  • 4 large (10-inch) Flour Tortillas for crispy outer layer
For the Cheese
  • 1.5 cups Cheddar Cheese freshly grated for sharpness
  • 1.5 cups Monterey Jack Cheese freshly grated for creaminess
For Cooking
  • 1 tbsp Vegetable Oil or Butter for golden-brown crust
For Garnish & Dipping
  • 2 tbsp Fresh Cilantro chopped for garnish
  • 1/2 cup Smooth White Sour Cream for dipping

Equipment

  • large skillet

Method

Step-by-Step Instructions
  1. Heat a large skillet over medium-high heat, then add the lean ground beef. Cook for 5-7 minutes, breaking it into finely crumbled pieces, until browned. Drain excess grease.
  2. Reduce heat to low, stir in taco seasoning, tomato paste, and beef broth into cooked beef. Let simmer for 2-3 minutes to thicken.
  3. Wipe skillet clean, brush a tortilla with oil or butter, place in skillet, and layer with 3/4 cup cheddar cheese, then beef mixture, followed by 3/4 cup Monterey Jack cheese.
  4. Fold tortilla over to create a half-moon shape, pressing lightly. Cook for 2-3 minutes until golden brown, flip, and toast the other side for another 2 minutes.
  5. Transfer toasted quesadilla to a cutting board, rest for 1 minute, then slice into triangles. Garnish with cilantro and serve with sour cream.

Notes

For best results, always use block cheese and avoid sogginess by draining excess grease from the beef.
