Ingredients
  

Waffle Batter
  • 2 cups All-Purpose Flour Can be substituted with gluten-free flour.
  • 1 tbsp Baking Powder
  • 1 tsp Baking Soda
  • 1 tbsp Ground Ginger Fresh ginger can be used for a bolder taste.
  • 1 tsp Ground Cinnamon Always use fresh for best results.
  • 1 tsp Ground Allspice Nutmeg can be substituted.
  • 1/4 tsp Ground Cloves Use sparingly.
  • 1/4 tsp Ground Nutmeg Fresh grated is best.
  • 1/2 tsp Salt Kosher salt recommended.
  • 1/2 cup Unsalted Butter Can use coconut oil as a dairy-free alternative.
  • 1/4 cup Brown Sugar Light or dark works.
  • 1/2 cup Molasses Use unsulphured or dark for best results.
  • 2 large Eggs Substitutes can be used.
  • 1 cup Buttermilk Can be replaced with yogurt mixed with a splash of milk.
Topping
  • 1 cup Pecan Halves Can use walnuts or almonds.
  • 1/2 cup Maple Syrup Agave syrup can be an alternative.

Method
 

Waffle Preparation
  1. Preheat your waffle maker on medium-high heat and your oven to 200°F (93°C).
  2. In a large bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, allspice, cloves, nutmeg, and salt.
  3. In another bowl, mix melted butter, brown sugar, and molasses until smooth. Then add eggs and buttermilk, mixing well.
  4. Combine the wet and dry ingredients gently, being careful not to overmix. Let the batter rest for 5 minutes.
  5. Grease the waffle maker and pour 1/3 cup of batter. Cook for 4-5 minutes until golden brown.
  6. Transfer finished waffles to the oven to keep warm while cooking the rest.
  7. Toast pecans in a skillet for 3-4 minutes, then add maple syrup and heat through for 1 minute.
  8. Serve waffles topped with warm maple pecan syrup and any additional toppings you like.
