Waffle Preparation
- Preheat your waffle maker on medium-high heat and your oven to 200°F (93°C).
- In a large bowl, whisk together the flour, baking powder, baking soda, ginger, cinnamon, allspice, cloves, nutmeg, and salt.
- In another bowl, mix melted butter, brown sugar, and molasses until smooth. Then add eggs and buttermilk, mixing well.
- Combine the wet and dry ingredients gently, being careful not to overmix. Let the batter rest for 5 minutes.
- Grease the waffle maker and pour 1/3 cup of batter. Cook for 4-5 minutes until golden brown.
- Transfer finished waffles to the oven to keep warm while cooking the rest.
- Toast pecans in a skillet for 3-4 minutes, then add maple syrup and heat through for 1 minute.
- Serve waffles topped with warm maple pecan syrup and any additional toppings you like.
