Step-by-Step Instructions
  1. In a medium bowl, combine the soy sauce, hoisin sauce, rice vinegar, chili paste, and sesame oil. Whisk until well blended.
  2. Place chicken thighs in a bowl, add reserved marinade, grated ginger, and minced garlic. Mix well and marinate for at least 30 minutes.
  3. Sprinkle cornflour over marinated chicken and toss until evenly coated.
  4. Heat oil in a skillet over medium-high heat. Fry chicken pieces for about 3 minutes on each side until golden brown.
  5. In another skillet, heat a teaspoon of oil, sauté minced garlic and ginger, then add the remaining sauce until it thickens.
  6. Add fried chicken to the simmering sauce, toss to coat evenly and serve immediately over steamed rice.
