- In a medium bowl, combine the soy sauce, hoisin sauce, rice vinegar, chili paste, and sesame oil. Whisk until well blended.
- Place chicken thighs in a bowl, add reserved marinade, grated ginger, and minced garlic. Mix well and marinate for at least 30 minutes.
- Sprinkle cornflour over marinated chicken and toss until evenly coated.
- Heat oil in a skillet over medium-high heat. Fry chicken pieces for about 3 minutes on each side until golden brown.
- In another skillet, heat a teaspoon of oil, sauté minced garlic and ginger, then add the remaining sauce until it thickens.
- Add fried chicken to the simmering sauce, toss to coat evenly and serve immediately over steamed rice.
