  • 1 tbsp fresh lemon juice Lime juice works as an alternative.
  • 1 tbsp fresh parsley, chopped Basil can be a lovely alternative.

Equipment

  • oven
  • baking sheet
  • mixing bowl
  • whisk

Method

Step-by-Step Instructions
  1. Preheat your oven to 425°F (218°C) while you prepare the summer squash. Wash and dry the squash thoroughly, then cut it into uniform 3/4 inch thick halves or rounds.
  2. In a large mixing bowl, whisk together the olive oil, minced garlic, thyme, oregano, and smoked paprika.
  3. Add the sliced summer squash to the bowl and toss gently until each piece is well coated with the seasoning blend. Sprinkle with kosher salt and cracked black pepper.
  4. Spread the seasoned squash in a single layer on a prepared baking sheet, ensuring no overlap.
  5. Roast the squash for 15-20 minutes, turning them halfway through the cooking time.
  6. Once roasting is complete, remove the squash from the oven and immediately sprinkle with Parmesan cheese, drizzle lemon juice, and garnish with parsley.

Notes

Ensure all squash is cut uniformly for even cooking. Use high-quality olive oil for better flavor. Avoid overcrowding the baking sheet to achieve crispiness.
