  • 2 cloves Minced Garlic Use fresh garlic for best flavor.
For the Coating
  • 1 cup Potato Starch Corn starch is a suitable alternative.
For Frying
  • 4 cups Vegetable Oil Use oils with high smoke points.

Equipment

  • Deep frying pan
  • mixing bowl
  • Kitchen thermometer
  • Flat Plate

Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine your chicken thighs with soy sauce, sake, mirin, grated ginger, and minced garlic. Mix well to ensure every piece of chicken is coated in the marinade. Let the chicken marinate for at least 30 minutes.
  2. While the chicken is marinating, pour potato starch onto a flat plate and spread it evenly. This will be the coating that gives your Chicken Karaage its signature crunch.
  3. After marinating, remove the chicken pieces from the bowl, allowing any excess marinade to drip off. One at a time, dredge each piece of chicken in the potato starch. Shake off any excess starch.
  4. In a deep frying pan, pour enough vegetable oil to submerge the chicken halfway and heat to 170°C (340°F). Test the oil by dropping in a small piece of chicken; it should sizzle immediately.
  5. Carefully add the coated chicken pieces into the hot oil in batches. Fry the chicken for about 5 minutes or until they turn a beautiful golden brown.
  6. Once golden, remove the fried chicken from the oil and let it drain on a plate lined with paper towels. Serve hot with a side of lemon wedges and your favorite dipping sauce.
