- Prepare the 'Honey' Mustard Sauce by whisking together neutral oil, agave or maple syrup, and mustard. Season with salt and pepper, then set aside.
- Drain and press the extra firm tofu for about 10 minutes, then slice into 1-inch strips.
- Make the batter by combining flour, cornstarch, baking powder, salt, and paprika in a bowl, then gradually add water until achieving a smooth consistency.
- Coat each tofu strip in batter, letting excess drip off, then roll in panko breadcrumbs.
- Preheat oven to 350°F (175°C). Bake the coated tofu tenders for 30-35 minutes, flipping halfway.
- Brush or spoon the 'honey' mustard sauce over tenders and bake for an additional 5-8 minutes.
