  • 1 cup Finely Chopped Cabbage Offers wonderful crunch and absorbs all the flavors beautifully; try using coleslaw mix as a quick substitute.
  • 100 grams Firm Tofu or Cooked Shrimp Your choice of protein to make these rolls satisfying; chicken or tempeh work wonderfully too!
  • 1/4 cup Green Onion Brightens up the flavor; you can skip it if you don’t have it on hand.

For the Sauce
  • 2 tablespoons Soy Sauce Opt for low-sodium or gluten-free soy sauce as needed.
  • 1 tablespoon Shaoxing Wine or Rice Vinegar
  • 1 teaspoon Sesame Oil

Step-by-Step Instructions
  1. Soak the rice paper sheets in a shallow dish of warm water for about 10–15 seconds, or until pliable but not too soft.
  2. Lay the soaked rice paper sheet on a damp surface. Layer with cooked vermicelli noodles, shredded carrots, chopped cabbage, protein of choice, green onion, ginger, and garlic.
  3. Fold the sides of the rice paper inwards and roll from the bottom. Ensure filling stays secure and compact.
  4. Preheat your air fryer to 375°F (190°C) for 2–3 minutes.
  5. Lightly brush each roll with cooking oil spray and arrange in the air fryer basket, seam-side down.
  6. Air fry the rolls for about 8–10 minutes, flipping halfway through.
  7. Serve warm with your favorite dipping sauces.

Notes

Store leftover rolls in an airtight container for up to 3 days. Uncooked rolls can be frozen for up to 3 months and air fried from frozen.
