  • 4 fillets Cod Aim for about 6 ounces each, look for fresh, firm fillets.
For the Coating
  • 1 cup Panko Breadcrumbs Use for superior crunch.
  • 1/2 cup Grated Parmesan Cheese Substitute with Pecorino Romano for a sharper taste.
  • 1 teaspoon Garlic Powder Can be omitted or replaced with fresh minced garlic.
  • 1 teaspoon Onion Powder Easily substituted with shallots.
  • 1 teaspoon Dried Oregano Thyme or basil can be used in its place.
  • 1 teaspoon Paprika For heat, replace with cayenne pepper.
  • to taste Salt and Pepper Always season to taste.
For the Sauce
  • 1/4 cup Mayonnaise Can use Greek yogurt as a lighter substitute.
  • 1 tablespoon Dijon Mustard Mustard powder or yellow mustard can be alternatives.
  • 1 tablespoon Lemon Juice Fresh lime juice may also work.
For Garnish
  • 2 tablespoons Fresh Parsley Use chives or cilantro as alternatives.

Step-by-Step Instructions
  1. Rinse the cod fillets under cold water and pat them dry. Season both sides with salt and pepper.
  2. In a mixing bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, onion powder, oregano, paprika, and additional salt and pepper. Stir until evenly combined.
  3. In a small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
  4. Brush one side of each cod fillet with the mayo mixture and press into the breadcrumb mixture to coat. Repeat for all fillets.
  5. Preheat the air fryer to 400°F (200°C) for about 5 minutes.
  6. Lightly spray the air fryer basket with cooking oil and place the coated fillets in a single layer. Cook for 10-12 minutes, flipping halfway through.
