- Rinse the cod fillets under cold water and pat them dry. Season both sides with salt and pepper.
- In a mixing bowl, combine panko breadcrumbs, grated Parmesan, garlic powder, onion powder, oregano, paprika, and additional salt and pepper. Stir until evenly combined.
- In a small bowl, whisk together mayonnaise, Dijon mustard, and lemon juice until smooth.
- Brush one side of each cod fillet with the mayo mixture and press into the breadcrumb mixture to coat. Repeat for all fillets.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Lightly spray the air fryer basket with cooking oil and place the coated fillets in a single layer. Cook for 10-12 minutes, flipping halfway through.
