  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard

Method
 

  1. In a large bowl, combine the shredded cabbage, diced cucumber, red bell pepper, red onion, and parsley. Toss gently to mix the vegetables evenly.
  2. In a separate small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  3. Pour the dressing over the salad mixture and toss until all the vegetables are evenly coated.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
