Step‑by‑Step Instructions
  1. Prep your corn by cutting kernels off the cob, draining canned corn, or thawing frozen corn.
  2. Heat a skillet over medium-high heat and roast the corn for 3-4 minutes until slightly charred.
  3. In a mixing bowl, combine sour cream, mayonnaise, and softened cream cheese until smooth.
  4. Add shredded cheddar, pepper jack, garlic powder, onion powder, smoked paprika, chili powder, salt, and black pepper; stir well.
  5. Fold in the roasted corn, chopped green onions, and diced red bell pepper.
