Ingredients
  

For the Dressing
  • 8 ounces Room Temperature Cream Cheese
  • 1 cup Sour Cream Greek yogurt works as a substitute.
  • ¼ cup Extra Virgin Olive Oil
  • 2 cloves Grated Garlic Use fresh garlic for best taste.
  • 2 tablespoons Fresh Chives Green onions can be a substitute.

  • ½ cup Crumbled Cotija or Feta Cheese Feta is a suitable alternative.
For the Salad
  • 1 pound Short Pasta Any short pasta like rotini or penne works beautifully.
  • 1 head Romaine Lettuce Shredded.
  • 2 cups Grilled or Roasted Corn From 3-4 fresh ears.
  • ½ cup Fresh Basil Torn.
  • ½ cup Fresh Cilantro Chopped, can be omitted.
  • ½ cup Spicy Cheddar Cheese Diced, regular cheddar can be used.
  • 1 Avocado Diced, add just before serving.
For the Chili Butter Topping
  • 4 tablespoons Salted Butter
  • 2 teaspoons Smoked Paprika
  • 2 tablespoons Chili Powder
  • ½ to 2 teaspoons Cayenne Pepper To taste.
For the Lime Dressing
  • ¼ cup Mayonnaise or Yogurt
  • 2 tablespoons Lime Juice

Method
 

Step‑by‑Step Instructions
  1. In a large mixing bowl, combine cream cheese, sour cream, olive oil, grated garlic, chives, salt, and pepper. Whisk until smooth.
  2. Bring a pot of salted water to a boil over high heat. Add pasta and cook until al dente, about 8-10 minutes. Drain and toss with the dressing.
  3. In the same bowl, add romaine, grilled corn, basil, cilantro, spicy cheddar, and avocado. Toss until well combined.
  4. In a skillet, melt butter, then stir in paprika and chili powder, cooking for 1-2 minutes.
  5. In another bowl, whisk together mayonnaise and lime juice. Set aside.
  6. Serve pasta salad in bowls, drizzled with lime dressing and topped with chili butter. Let sit for 10 minutes before serving.
