Preparation Steps
  1. Begin by placing the boneless skinless chicken breasts at the bottom of your slow cooker.
  2. Sprinkle garlic powder, salt, cumin, and chili powder evenly over the chicken breasts.
  3. Layer the frozen sweet corn on top of the seasoned chicken.
  4. Cut the cream cheese into chunks and distribute them over the corn.
  5. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
  6. Once cooked, carefully remove the chicken and shred it.
  7. Return the shredded chicken to the slow cooker and stir in the sour cream and mayonnaise.
  8. Sprinkle with chopped cilantro and crumbled queso fresco before serving.
