Step-by-Step Instructions for Creamy Garlic Pork Chops with Potatoes
  1. Season the bone-in pork chops generously with salt, pepper, dried thyme, and rosemary on both sides. Allow to sit for 15 minutes.
  2. Heat oil or butter in a skillet over medium-high heat. Sear pork chops for 2-3 minutes on each side until golden brown. Transfer to a plate.
  3. Layer halved baby potatoes and sliced onions at the bottom of the crockpot.
  4. Place the seared pork chops atop the potato and onion layer in the crockpot.
  5. Combine chicken broth, heavy cream, and minced garlic in a mixing bowl. Pour over the pork chops and potatoes.
  6. Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
  7. If thicker sauce is desired, prepare a slurry with cornstarch and water, mix in and cook on high for an additional 10-15 minutes.
  8. Garnish with fresh parsley before serving. Plate the dish and drizzle with extra creamy sauce.
