Step-by-Step Instructions for Creamy Garlic Pork Chops with Potatoes
- Season the bone-in pork chops generously with salt, pepper, dried thyme, and rosemary on both sides. Allow to sit for 15 minutes.
- Heat oil or butter in a skillet over medium-high heat. Sear pork chops for 2-3 minutes on each side until golden brown. Transfer to a plate.
- Layer halved baby potatoes and sliced onions at the bottom of the crockpot.
- Place the seared pork chops atop the potato and onion layer in the crockpot.
- Combine chicken broth, heavy cream, and minced garlic in a mixing bowl. Pour over the pork chops and potatoes.
- Cover the crockpot and set it to cook on low for 6-7 hours or high for 3-4 hours.
- If thicker sauce is desired, prepare a slurry with cornstarch and water, mix in and cook on high for an additional 10-15 minutes.
- Garnish with fresh parsley before serving. Plate the dish and drizzle with extra creamy sauce.
