Ingredients

For the Salad
  • 8 ounces small pasta noodles gluten-free pasta is a great option
  • 1 cup frozen peas thawed
  • 6 slices thick cut bacon cooked and chopped; turkey bacon works as a healthier alternative
  • 1/2 cup freshly grated Parmesan cheese for a dairy-free option, try nutritional yeast
For the Dressing
  • 1 cup mayonnaise Greek yogurt is an excellent lighter substitute
  • 1 tablespoon olive oil avocado oil can also be used
  • 2 tablespoons apple cider vinegar white wine vinegar makes a perfect substitute
  • 1 tablespoon granulated sugar to taste; feel free to omit
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
For Extra Flavor
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Equipment

  • large pot
  • Colander
  • skillet
  • mixing bowl
  • whisk
  • spatula

Method

Step-by-Step Instructions
  1. Boil a large pot of water. Cook the small pasta noodles according to package instructions until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Thaw the frozen peas in warm water for about 5 minutes. Cook the thick-cut bacon in a skillet over medium heat until crispy, about 6-8 minutes, and crumble it into pieces.
  3. In a mixing bowl, combine mayonnaise, olive oil, and apple cider vinegar. Add sugar, salt, pepper, garlic powder, and onion powder. Whisk until smooth.
  4. In a large bowl, combine cooled pasta, peas, bacon, and Parmesan cheese. Pour the dressing over, and gently fold everything together.
  5. Cover and refrigerate the salad for at least 1-2 hours to allow flavors to meld. Serve after stirring gently.

Notes

Best enjoyed within the first few days for optimal freshness. Stir in extra dressing if it appears dry after refrigeration.
