Step-by-Step Instructions for Creamy Parmesan Rice
  1. Melt the butter in a medium saucepan or Dutch oven over medium-low heat until bubbly and fragrant.
  2. Add the finely diced onion and sauté for about 2-3 minutes until translucent and soft but not browned.
  3. Stir in the uncooked long grain white rice, garlic powder, and salt. Cook for an additional minute, stirring constantly.
  4. Pour in the chicken stock and 1 ¼ cups of milk, reserving ¼ cup of milk for later. Stir gently and bring to a gentle boil.
  5. Lower the heat to medium-low and cover, allowing the rice to simmer gently for 20 minutes.
  6. After 20 minutes, check the rice for tenderness. If firm, cover and cook for 1-2 additional minutes, checking frequently.
  7. Remove from heat and stir in the reserved ¼ cup of milk, lemon juice, lemon zest, and Parmesan cheese.
  8. Taste and adjust salt if needed. Garnish with freshly chopped parsley and serve immediately.
