  • 12 ounces uncooked penne any short pasta variety works
  • 1 cup whole milk or heavy cream for richer texture
  • 1 cup Parmesan cheese shredded, pecorino can substitute
  • 2 tablespoons Italian parsley chopped, can replace with basil

Step-by-Step Instructions
  1. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Season 1 pound of boneless, skinless chicken breasts with salt and pepper, and cook until golden brown (about 4-5 minutes).
  2. Stir in 1 tablespoon of Italian seasoning and 3 minced garlic cloves, cooking for 1-2 minutes until fragrant but not burnt.
  3. Pour in 3 cups of low-sodium chicken broth and 1 cup of water, bring to a rolling boil, then add 12 ounces of uncooked penne pasta. Cover and cook for 15 minutes, stirring occasionally.
  4. Stir in 1 cup of whole milk and continue cooking for another 5 minutes until creamy.
  5. Return the sautéed chicken to the skillet and add 1 cup of shredded Parmesan cheese, stirring until combined and melted.
  6. Serve hot, garnished with chopped Italian parsley.
