  • 2 cups Cheese Tortellini Fresh or frozen
  • 1/2 cup Sun-Dried Tomatoes
  • 1 cup Heavy Cream Can substitute with half-and-half or coconut milk
  • 3 cloves Garlic Mince for best flavor
  • 2 cups Spinach Rinsed and dried
  • 1 cup Chicken Broth Can substitute with vegetable broth
  • 2 tablespoons Olive Oil
Seasoning
  • 1 tablespoon Italian Seasoning
  • to taste Salt
  • to taste Pepper

Preparation
  1. Gather all ingredients. Chop chicken, mince garlic, and slice sun-dried tomatoes. Rinse and dry spinach if using fresh.
  2. Heat olive oil in a large skillet over medium heat. Add chicken, seasoning with salt and pepper. Cook until golden brown and cooked through, about 5-7 minutes.
  3. Add minced garlic and sun-dried tomatoes to the skillet. Cook for 1-2 minutes until garlic is fragrant.
  4. Reduce heat to medium-low, then pour in heavy cream and chicken broth. Stir until well combined and let simmer for about 3-4 minutes.
  5. Fold in cooked cheese tortellini and fresh spinach. Cook for additional 3-5 minutes until spinach wilts.
  6. Taste and adjust seasoning with salt, pepper, or Italian seasoning as desired. Serve immediately.
