  1. In a medium bowl, whisk together mayonnaise, red wine vinegar, pepperoncini juice, dried oregano, and grated garlic. Season with salt and black pepper to taste. Cover and refrigerate for at least 30 minutes.
  2. Bring a large pot of salted water to a boil. Add rotini pasta and cook for 9-10 minutes until al dente. Drain and rinse under cold water. Set aside to cool.
  3. Chop oven-roasted turkey, pepperoni, and salami into bite-sized pieces. Cube provolone cheese and halve cherry tomatoes. Slice iceberg lettuce and chop red onion.
  4. In a large mixing bowl, combine cooled pasta, chopped turkey, pepperoni, salami, provolone, cherry tomatoes, and prepared vegetables. Toss gently to mix well.
  5. Pour the refrigerated dressing over the salad mixture. Toss until well coated. Cover and refrigerate for at least 2 hours before serving.

Notes

Avoid overcooking the rotini! Aim for al dente to maintain texture. Store in an airtight container for 3-4 days.
