- In a mixing bowl, combine shredded chicken, green chiles, and half of the pepper jack cheese. Stir until well incorporated.
- Pour a layer of the creamy green enchilada sauce into the bottom of your baking dish.
- Warm the tortillas briefly in a skillet or microwave. Place a generous amount of the chicken mixture in each tortilla, roll tightly, and place seam-side down.
- Pour the remaining creamy green enchilada sauce over the filled tortillas. Ensure they are fully coated.
- Sprinkle the remaining pepper jack cheese evenly on top. Bake for 25-30 minutes until the cheese is bubbly and slightly golden.
- Remove from oven and let cool for a few minutes. Serve warm.
