Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant.
Pour in the heavy cream, stirring to combine. Bring the mixture to a simmer.
Add the grated Parmesan cheese and Italian seasoning, stirring until the cheese is melted and the sauce is smooth.
Return the cooked chicken to the skillet, coating it in the creamy sauce. Let it simmer for an additional 2-3 minutes to heat through.
Garnish with chopped fresh parsley before serving.
