Ingredients
  

  • 2 cups uncooked penne pasta
  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup spinach chopped
  • 1/4 cup fresh parsley chopped (for garnish)

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  2. Season the chicken breasts with Italian seasoning, salt, and black pepper. Add the chicken to the skillet and cook for 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the chicken broth and bring to a simmer. Stir in the heavy cream and Parmesan cheese, mixing until the cheese has melted and the sauce is smooth.
  4. Return the chicken to the skillet, and add the uncooked penne pasta and chopped spinach. Stir to combine, ensuring the pasta is submerged in the sauce.
  5. Cover the skillet and reduce the heat to low. Cook for 15-20 minutes, stirring occasionally, until the pasta is tender and has absorbed some of the sauce.
  6. Slice the chicken and serve over the pasta. Garnish with fresh parsley before serving.
