Ingredients

For the Casserole
  • 1 cup long-grain white rice can substitute with brown rice (increase baking time by 10-15 minutes)
  • 2 cups low-sodium chicken broth no substitutes suggested, but water can be used in a pinch
  • 1.5 lbs boneless, skinless chicken breasts can swap for thighs for a juicier result
  • 1 teaspoon garlic powder substitute with fresh garlic if desired
  • 1 teaspoon onion powder fresh onion can be used; may alter cooking time
  • 1 teaspoon dried oregano fresh oregano is a fantastic substitute
  • 1 teaspoon paprika can be replaced with smoked paprika for deeper notes
  • 1 cup tzatziki sauce use store-bought or homemade; opt for varieties with fresh herbs
  • 0.5 cup crumbled feta cheese omit for a lighter dish or replace with goat cheese
  • 0.25 cup chopped fresh parsley or dill use any preferred herbs for garnish
  • 1 cup cucumber slices optional; any salad vegetable can be swapped

Equipment

  • 9x13 inch baking dish
  • Aluminum Foil

Method

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.
  2. Spread uncooked long-grain white rice across the bottom of the prepared baking dish. Pour low-sodium chicken broth over the rice.
  3. Place boneless, skinless chicken breasts on top of the rice layer. Sprinkle garlic powder, onion powder, dried oregano, and paprika over the chicken.
  4. Spoon tzatziki sauce over the seasoned chicken, spreading it evenly.
  5. Cover the baking dish tightly with aluminum foil and bake for 35-40 minutes.
  6. Carefully remove the foil. If there's excess liquid, return the casserole to the oven and bake uncovered for an additional 5-10 minutes.
  7. Allow the casserole to rest for 5 minutes before serving. Sprinkle crumbled feta and chopped herbs over the top before serving.

Notes

Serve with warm pita or a side of Greek yogurt for dipping.
