  • 1/4 tsp Cayenne Pepper Adjust based on spice comfort
  • 1 tsp Garlic Powder Fresh garlic can be used for bold flavor
  • 1 tbsp Hot Sauce Adjust amount based on taste
  • 2 cups Mexican Cheese Blend Any shredded cheese can work
  • 2 tbsp Lime Juice Freshly squeezed is best
  • 1/2 cup Cotija Cheese Feta can be a good alternative
  • 1/4 cup Fresh Cilantro For garnish
For Serving
  • 1 bag Tortilla Chips Homemade or store-bought
  • 1 cup Diced Vegetables Fresh veggies like bell peppers or cucumbers
  • 2 cups Grilled Meats Use as topping for tacos or burritos

Equipment

  • Crock Pot

Method

Preparation
  1. Gather all the ingredients: frozen corn (thawed), cream cheese, sour cream, chopped red onion, diced jalapeño, chili powder, smoked paprika, cayenne pepper, garlic powder, hot sauce, and shredded cheese. In a 4-quart crock pot, combine all ingredients and mix well.
  2. Cover the crock pot with its lid and set it to Low heat. Cook for 2 to 3 hours, stirring halfway through, until the cheese is melted and creamy.
  3. Once creamy, stir in half of the cotija cheese and freshly squeezed lime juice, followed by the remaining cotija cheese and fresh cilantro.
  4. Serve warm alongside tortilla chips or use as a topping for tacos and burritos.

Notes

For best results, make the dip in advance and refrigerate, adding extra cooking time if starting cold. Keep warm during gatherings to maintain creaminess.
