- Preheat your oven to 350°F (175°C).
- Place the chicken breasts between two sheets of plastic wrap or parchment paper and pound to about ¼ inch thickness.
- Season both sides of the chicken with salt and pepper.
- On each chicken breast, layer slices of ham and Swiss cheese. Roll the chicken tightly and secure with toothpicks.
- Dredge each rolled chicken in flour, dip into beaten eggs, and coat with breadcrumbs.
- Heat butter and olive oil in an oven-proof skillet. Brown the chicken rolls for about 4-5 minutes on each side.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes until cooked through.
- Prepare the cream sauce by warming heavy cream and whisking in Dijon mustard, garlic powder, onion powder, and Parmesan cheese. Let simmer until thickened.
- Remove the chicken from the oven, discard toothpicks, let rest, then slice and serve topped with cream sauce and garnished with parsley.
