Ingredients
  

  • 2 cups rotini pasta
  • 1 cup cooked chicken shredded or diced
  • 6 slices bacon cooked and crumbled
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup ranch dressing
  • 1/4 cup mayonnaise
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Method
 

  1. Cook the rotini pasta according to package instructions. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the cooked pasta, chicken, crumbled bacon, cherry tomatoes, red onion, and cheddar cheese.
  3. In a separate bowl, whisk together the ranch dressing, mayonnaise, apple cider vinegar, garlic powder, salt, and pepper until smooth.
  4. Pour the dressing over the pasta mixture and toss until everything is well coated.
  5. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  6. Before serving, give the pasta salad a good stir and garnish with chopped parsley.
