  • 1 cup Mayonnaise Can use vegan mayonnaise
  • 1 cup Caesar dressing
  • 1/2 cup Grated Parmesan cheese Nutritional yeast as a substitute
  • 2 tablespoons White vinegar Can use lemon juice
  • 1 tablespoon Worcestershire sauce Vegan version available
  • 1 teaspoon Celery salt
  • 3 stalks Celery Chopped
  • 1 medium Red onion Diced
  • 4 large Hard-boiled eggs Chopped, omit for vegan
  • 1/4 cup Fresh chives For garnish
For Serving
  • 1/4 cup Fresh parsley Optional
  • 2 pieces Lemon wedges Optional

Equipment

  • large pot
  • skillet
  • mixing bowl
  • paper towels

Method

Step-by-Step Instructions
  1. Place the red potatoes in a large pot and cover them with water. Bring to a boil over high heat and cook for about 10 minutes, or until fork-tender. Drain the potatoes and set aside to cool slightly.
  2. In a skillet over medium heat, cook the thick-cut bacon until crispy, about 10 to 15 minutes. Transfer the bacon to a paper towel-lined plate to absorb excess fat.
  3. In a mixing bowl, combine the cooked bacon, mayonnaise, Caesar dressing, grated Parmesan cheese, white vinegar, Worcestershire sauce, and celery salt. Mix well until fully blended.
  4. Add the warm, drained potatoes and chopped hard-boiled eggs to the bowl. Gently toss until combined, ensuring the potatoes are evenly coated.
  5. Cover the bowl and refrigerate for at least 4 hours to allow flavors to meld.

Notes

Ensure potatoes are fork-tender but not overboiled. Refrigerate for better flavor absorption.
