- Preheat your oven to 400°F (200°C).
- If using individual ramekins, divide the cherry tomatoes, red bell pepper, red onion, garlic, and feta cheese evenly among four dishes. For a large baking dish, combine all ingredients and place the feta in the center. Drizzle with olive oil.
- Mix the dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes in a bowl. Sprinkle this over the feta and vegetables.
- Place your ramekins or large dish on a baking sheet and bake for 25 minutes, until the tomatoes are blistered and the feta is golden on top.
- Carefully stir the mixture and fold in the fresh baby spinach.
- Create small wells in the mixture for the eggs and crack them into each well.
- Return to the oven for an additional 10 minutes, until the egg whites are set.
- Remove from the oven, let cool slightly and sprinkle with optional herbs or chives before serving.
