  • 1 teaspoon flour Cornstarch can be a gluten-free alternative if needed.
  • 1/2 teaspoon Dijon mustard This is optional but can enhance flavor.
  • 1 cup heavy/whipping cream Consider half-and-half for a lighter touch.
  • Salt & pepper Adjust seasoning after mixing all ingredients.
For Serving
  • freshly grated parmesan cheese Pecorino Romano is a great substitute.

Method
 

Step-by-Step Instructions
  1. Boil the pasta in a large pot of salted water until al dente, about 8-10 minutes. Reserve a cup of pasta water, drain, and set aside.
  2. In a skillet, cook bacon over medium-high heat until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate, leaving fat in the skillet.
  3. Sauté mushrooms in the skillet with bacon fat for 5-6 minutes until browned and moisture evaporates.
  4. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Combine mushrooms and garlic with bacon on a plate. Pour chicken broth or wine into the skillet and add Italian seasoning, lemon juice, and flour. Stir for 1 minute to combine and thicken slightly.
  6. Slowly stir in heavy cream and simmer gently for about 2 minutes, thickening the sauce.
  7. Add bacon and mushrooms back into the sauce, heating through for 1-2 minutes.
  8. Toss drained pasta with the sauce, adding reserved pasta water if necessary to achieve desired consistency. Season with salt and pepper.
  9. Serve garnished with parmesan cheese and parsley.
