  • 1 teaspoon Dried Thyme Herbal notes
For the Sauce
  • 1 cup Chicken Broth For deglazing

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Slice a pocket into each chicken breast.
  3. Season with salt, pepper, garlic powder, onion powder, and thyme.
  4. Sauté spinach in olive oil until wilted, about 3-4 minutes.
  5. Mix sautéed spinach with dried cranberries for stuffing.
  6. Stuff the chicken breasts with the spinach-cranberry mixture and Brie.
  7. Secure with toothpicks.
  8. Sear in a skillet until golden brown, about 3 minutes per side.
  9. Add chicken broth and scrape up browned bits.
  10. Bake in the oven for 20-25 minutes until the internal temperature reaches 165°F (74°C).
  11. Let the chicken rest for 5 minutes before serving.
