- In a food processor, combine fresh cranberries, honey, olive oil, balsamic vinegar, minced garlic, orange juice and zest, sea salt, and black pepper. Blend until smooth.
- Place the chicken thighs in a large ziplock bag or shallow dish, pour the marinade over the chicken, and let it marinate in the refrigerator for at least 2 hours, or overnight.
- Preheat your oven to 375°F (190°C).
- Arrange the marinated chicken in a greased baking dish, pour any excess marinade over the top, and scatter fresh cranberries around the chicken. Bake for 25-30 minutes.
