For the Meatloaf
  • 1 pound ground beef Use an 80/20 or 85/15 blend
  • 1/2 cup plain breadcrumbs Use Italian-style for added flavor
  • 1/3 cup milk Oat milk can be a dairy-free substitution
  • 1 large egg Beaten
  • 1/4 cup ketchup Can substitute with BBQ sauce
  • 1 teaspoon garlic powder Or use fresh minced garlic
  • 1 teaspoon onion powder Finely chopped onions work too
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
For the Mashed Potatoes
  • 2 cups mashed potatoes Yukon Gold or Russet recommended
  • 1/4 cup sour cream Greek yogurt or cream cheese can also be used
  • 2 tablespoons butter Can use olive oil for a lighter version
  • 1 1/2 cups shredded cheddar cheese Feel free to swap for mozzarella or pepper jack
For Garnish
  • 1 bunch fresh parsley Optional

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x9-inch baking dish.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and pepper. Mix gently until just combined.
  3. Transfer the mixture into the greased baking dish, press down evenly, and bake uncovered for 20–25 minutes until browned and firm.
  4. If using leftover mashed potatoes, warm them in a pot. Stir in sour cream and butter, seasoning with salt and pepper to taste. If making fresh, boil and mash the potatoes first.
  5. After 25 minutes, spoon mashed potatoes over the meatloaf evenly.
  6. Sprinkle shredded cheddar cheese on top and return to oven, baking for an additional 10–15 minutes until cheese is melted.
  7. Let cool for 5–10 minutes before serving. Garnish with fresh parsley if desired.
