  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice
  • 1/2 cup brown sugar or coconut sugar as a substitute
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 cup dried cranberries or raisins/cherries as replacements
For the Crumble Topping
  • 1/2 cup unsalted butter chilled
  • 1 cup all-purpose flour or gluten-free flour as a substitute
  • 1 cup rolled oats quick or old-fashioned
  • 1/2 cup sharp cheddar cheese shredded
  • 1/2 cup pecans optional

Method
 

Instructions
  1. Preheat the oven to 375°F (190°C) and prepare an 8x8 inch casserole dish with cooking spray.
  2. In a medium bowl, combine chilled unsalted butter, flour, brown sugar, and rolled oats until crumbly. Stir in cheddar cheese and pecans.
  3. In a large bowl, toss sliced apples with lemon juice, lemon zest, brown sugar, cinnamon, nutmeg, and dried cranberries until evenly coated.
  4. Pour the apple mixture into the prepared baking dish and sprinkle the crumble topping evenly over it.
  5. Bake in the preheated oven for 30 minutes until bubbling and golden brown.
  6. Allow to cool for 10 minutes before serving warm, optionally with vanilla ice cream.
