In a large bowl, whisk together the cornmeal, flour, baking powder, salt, and sugar.
In a separate bowl, beat the egg and then mix in the milk and melted butter.
Pour the wet ingredients into the dry ingredients and stir until just combined.
Fold in the shredded smoked Gouda cheese.
Preheat your waffle iron according to the manufacturer's instructions and lightly grease it.
Pour about 1/4 cup of batter onto the center of the waffle iron and close the lid.
Cook until golden brown and crisp, about 3-5 minutes.
Repeat with the remaining batter.
Once cooked, remove the waffle bites from the waffle iron and place them on a serving platter.
