  • 2 pounds Beef Chuck cut into 2-inch cubes
  • 2 tablespoons Neutral Oil for searing

  • 1 stalk Lemongrass smashed
  • 4 leaves Makrut Lime Leaves can substitute with lime zest

For the Cooking Base
  • 3 tablespoons Red Curry Paste adjust for spice level
  • 1 teaspoon Turmeric
  • 1 can Coconut Milk full-fat
  • 1 cup Water or beef broth
  • 2 tablespoons Palm Sugar or brown sugar
  • 2 tablespoons Fish Sauce or soy sauce
For the Vegetables
  • 1 large Yellow Onion chopped
  • 2 medium Carrots sliced
For Serving
  • 4 cups Steamed Rice such as jasmine rice
  • 1/4 cup Cilantro for garnish
  • 2 pieces Lime cut into wedges
  • 2 tablespoons Chili Oil for drizzling

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and gather all your ingredients and cooking tools.
  2. Cut the beef chuck into 2-inch cubes, season with salt and pepper, and sear in neutral oil for 4-5 minutes until browned. Transfer to a plate.
  3. In the same pot, sauté ginger, garlic, serranos, lemongrass, turmeric, and lime leaves for 2-3 minutes until fragrant.
  4. Add coconut milk and water, then stir in palm sugar and fish sauce, cooking for another 1-2 minutes.
  5. Return beef and any juices, add onion and carrots, cover with a lid, and braise in the oven for about 2.5 to 3 hours.
  6. Remove from oven, discard lemongrass and lime leaves, let rest for 30 minutes, and serve over rice garnished with cilantro, lime, and chili oil.
