Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x5 inch baking pan.
- In a large mixing bowl, cream together the butter and dark brown sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition, then mix in the pumpkin puree, bananas, and vanilla.
- In another bowl, whisk together the flour, pumpkin pie spice, baking soda, salt, and cinnamon.
- Fold the dry mixture into the wet ingredients gently.
- Pour the batter into the prepared pan and bake for 55–60 minutes.
- Once baked, let it cool for about 10 minutes, then transfer to a wire rack.
- To prepare the glaze, melt the butter and maple syrup, then stir in the powdered sugar, vanilla, and salt.
- Once the bread is cooled, pour the maple glaze over the top.
