Ingredients
  

  • 2 cups cooked chicken breast diced
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper diced
  • 1/2 cup red onion finely chopped
  • 1/2 cup shredded carrots
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. In a large bowl, combine the chopped romaine lettuce, diced chicken, cherry tomatoes, cucumber, red bell pepper, red onion, shredded carrots, feta cheese, and parsley.
  2. In a small bowl, whisk together the olive oil, red wine vinegar, garlic powder, salt, and pepper until well combined.
  3. Pour the dressing over the salad and toss gently to combine all ingredients evenly.
  4. Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld.
